got a hose end with a 3/4-16 JIC swivel on it. is this the right adapter to go over to 3/8-18 pipe thread?

That's what this one's for. The male end threads into a 3/8-18 NPT port, and the female swivel end accepts a 3/4-16 JIC fitting, which is the standard thread for a -8 JIC hose end. The 37-degree flare on the female side matches up with standard SAE JIC hose assemblies, so you'll get a proper metal-to-metal seal at that connection. Steel construction, straight configuration, no angled body to work around.
