got a hose end that’s 9/16-18 JIC, what does the other side of this adapter screw into?

On the pipe side, it’s a 1/4-18 male NPTF thread. The other end is a 9/16-18 female JIC 37 degree flare swivel, so it mates to a JIC 37 degree male flare.

what industries is this adapter actually rated for? we run a paper mill and need something that holds up

Marine, military, chemical processing, pulp and paper, food and beverage, and offshore drilling are all listed applications for this fitting. Pulp and paper specifically is called out, so it lines up with what you're running. The Eaton Aeroquip 2018 series has a solid track record in those kinds of wet, corrosive process environments.
