i’ve got a hose end that’s 1/2-20 JIC, will this adapter let me tie into a 1/4-18 female NPT port?

Matches that setup. One side is 1/4-18 female NPT (internal pipe) and the other side is 1/2-20 male JIC with a 37 degree flare, in a straight adapter style.

what industries is this adapter actually built for? seen a lot of generic fittings but wondering if this one's spec'd for anything serious

Eaton Aeroquip put this fitting into service across some pretty demanding environments. It carries ratings for marine and military use, offshore drilling, chemical processing, pulp and paper use, and food and beverage processing. That's not a light-duty lineup. If you're running lines in any of those settings, this adapter was built with those conditions in mind.
