fitting says it's non-adjustable, does that mean once it's on the hose it ain't coming back off, or just that you can't reposition the flange angle?

Non-adjustable on this type of fitting means the flange orientation is fixed and cannot be rotated or repositioned after the assembly is made. Once it's crimped onto the hose, that flange sits where it sits. So before you build the assembly, make sure your port alignment is already figured out. It's not about whether the fitting is permanent to the hose itself, just that you won't have any swivel or clocking flexibility after the fact.
