fitting says it's for a -12 hose dash size, does that mean it won't work on anything smaller or is there some wiggle room there?

The -12 dash size is specific to this fitting. It's matched to hose assemblies built around that size, so there's no practical crossover to smaller hose sizes. If your assembly runs a different dash size, you'd need a fitting spec'd for that size to get a proper, secure connection.
