i got a hose end that’s 1-5/8-12 jic, is this the straight adapter that’ll mate up to it and then go into 1-1/4-11-1/2 pipe thread?

Match the thread callouts and end styles and you are in good shape. One side is a 1-5/8-12 male JIC 37 degree flare (SAE 37), and the other side is a 1-1/4-11-1/2 male NPTF pipe thread. Both ends are male and the body is straight.

Yes. It’s a straight Eaton Aeroquip 2021 Series adapter with a 1-1/4-11-1/2 male NPT on one end and a 1-5/8-12 male JIC 37 degree flare on the other, meant for going from pipe thread to a 37 degree flare connection.

what industries is this adapter actually built for? seen similar ones marketed as "general purpose" but end up being junk in harsh environments

Eaton Aeroquip rated this one for some pretty demanding applications including marine and military use, offshore drilling, chemical processing, pulp and paper, and food and beverage processing. That range tells you it holds up where conditions get rough, not just in clean shop environments.
