what industries is this adapter actually used in, like is it just for hydraulics or does it cover other stuff too

Quite a few industries run this fitting. Marine and military applications use it, along with chemical processing, pulp and paper use, food and beverage processing, and offshore drilling. So it covers a pretty wide range beyond just standard hydraulic setups.
