fitting says it works up to -12 hose size, does that mean it wont fit nothing bigger or is that just the max they rate it for?

The -12 dash size is what this fitting is built around, so that's the hose size it's matched to. It's not a "maximum up to" situation where smaller sizes slide in and work fine. You need a -12 hose for a proper, secure connection. Running it with a different dash size would compromise the integrity of the assembly.
