Will this quick disconnect work with other brands that meet the ISO 7241/1 Series B standard?

Because it is an industrial interchange coupling conforming dimensionally to ISO standard 7241/1 Series B, this should work fine with other brands that also meet that spec.

Trying to replace an old Series B style plug, is this one the stainless male half with a 1/4-18 female NPT port?

It matches the Industrial Interchange ISO 7241/1 Series B style and it is the male half. The threaded end is 1/4-18 female NPT and the coupling size is -04.

What kind of seal comes standard on this coupling, and how cold can it actually get before that seal starts giving trouble?

Buna-N is the standard seal material on this one. It holds up from -40 degrees F all the way up to 250 degrees F, so if you're running equipment through hard winters or in heated fluid applications, you've got solid coverage on both ends of that range. If your setup pushes past 250 degrees, there are other seal options available for this series, including EPDM rated to 300 degrees and FKM rated to 400 degrees, so the platform gives you room to spec it correctly for hotter conditions.
