What kinda temperature range can these handle? I'm working with some pretty hot stuff sometimes.

For the urethane models, you're looking at a temperature range of -65°F to 220°F. If you need something that can handle higher temperatures, you might want to look at the Teflon models, which go from -40°F to 500°F.

got an o-ring that’s a -338, do these back-up rings match that size or am i mixing things up

Fit is based on O-ring dash sizes, so a -338 back-up ring corresponds to a -338 O-ring size.
