got a cylinder with a 1.50 shaft and a 2.00 gland bore, is this vee packing set the right size?

The key dimensions on this set are 1.50 inch ID, 2.00 inch OD, and 1.125 inch height. If your seal cavity is built around those sizes, it is the matching packing set size.

What pressure range can this vee packing set actually handle, and does the number of vees in the stack affect that?

The number of vee rings you run does change the pressure rating. Four vees gets you up to 3,000 PSI, five vees bumps that to 5,000 PSI, and a full six-vee arrangement handles up to 10,000 PSI. The set comes with nylon adaptors on top and bottom, and the middle rings are a mix of urethane and fabric reinforced rubber vees. So if your application runs at higher pressures, you just configure the stack with more vees accordingly.
