Will this valve work with regular hydraulic fluid or do I need something special?

It's designed for use with hydraulic fluid, specifically mineral oil with a viscosity of 16 cSt. The optimal viscosity range is 12 to 75 cSt, but it can handle fluids from 10 to 400 cSt.

runs up to 5100 PSI on the work ports if I'm reading it right, but what about back pressure on the return side? is there a limit there?

Back pressure on the return is capped at 363 PSI for this valve. That's worth keeping in mind if you're routing return flow through any downstream components that could build resistance. The work ports, P, A, and B, handle up to 5100 PSI, but that return-side limit is a separate number and it's easy to overlook until something causes a problem.
