trying to set this up for a cylinder, when the lever’s centered are both work ports blocked off?

In neutral, ports A and B are closed on this 4 way, 4 position working section, and the spool is spring centered back to neutral.

This working section is rated up to 5100 PSI on ports P, A, and B, so as long as your tractor's system falls within that range, it should be suitable.

float detent on this thing -- does that mean the spool'll stay put in float position without me holding the lever, or do I gotta keep tension on it?

Float detent holds the spool in the float position on its own, so you don't have to maintain any pressure on the lever. When you push through to that fourth position, it latches. The spring centering only kicks in for the neutral return, not the float detent. That's the whole point of having it -- hands-free float for blade or bucket work where you want the implement to follow ground contour without fighting you.
