fitting's got a 0.375 tube OD on it, that gonna work with my -06 hose, or do I need something different?

For -06 hose with a 3/8 inch standpipe tube, this is the right match. The tube OD is 0.375 inch and the hose size is confirmed at -06, so those two line up without any adapter or transition needed. Just make sure you're using a compatible crimp setup on the hose end side.

Is this fitting gonna work for hydraulic lines on my tractor? Gotta make sure it can handle the pressure.

Application-wise, this fitting is best suited for general purpose, low to medium pressure hydraulic systems. If your tractor's hydraulics operate within those ranges, it should work. If shock hazards are a concern, consider H277 or H435 hose instead.
