fitting says it works with 1-wire and 2-wire braid hose, does that mean I don't have to buy two different fittings if I'm switching between the two on the same job?

Correct on that. The 1AA8MF8 is rated for both 1-wire and 2-wire braid hose in the -08 size, so one part number covers both configurations. That's handy when you're working across a mix of hose types without wanting to stock two separate fittings for the same connection point.
