does this fitting work with -06 hose only, or can it handle other sizes too?

For -06 hose size, you're in the right place. The fitting is specifically sized for -06 hose and pairs with H277 or H435 hose types, particularly in situations where shock hazards are a concern. The hose end measures 0.375 inches, so trying to run it on a different hose size isn't going to give you a reliable connection.

trying to swap out a fitting on a -06 hose, is this one the 45 degree elbow with the 5/8-18 male inverted flare end?

You are looking at a -06 hose crimp fitting with a 45 degree elbow and a 5/8-18 male SAE inverted flare on one end. The other end is the hose side listed as 0.375 line/hose/tube, with an end size of 0.625 on the male inverted flare side.
