fitting says it works with H277 or H435 hose, does that mean it won't crimp onto other hose types, or is that just where it's been tested and rated?

That compatibility is specific, not just a recommendation. The 1AA16MR12 is rated and validated for H277 and H435 hose only. Using it with other hose types falls outside what it's been engineered and tested for, so sticking to those two is the right call if you want a reliable crimp connection.

Will this fitting hold up in a hydraulic system that sees a good bit of vibration and shock?

This fitting is designed for general-purpose, low and medium pressure hydraulic applications where there might be shock hazards. It's compatible with H277 or H435 hose types for that kind of environment.
