got a rig that runs with a fair bit of shock and jolting. these fittings hold up alright for that

Heavy shock hazards require a different setup using H277 or H435 hoses. These steel crimp fittings handle general purpose low and medium pressure hydraulic lines just fine but are not meant for high impact applications.

Trying to swap out an old Aeroquip fitting, is this one the straight male 1/4-18 pipe to -04 hose end?

For a straight male pipe to hose connection, this one matches 1/4-18 male NPTF on one end and a -04 hose size on the other, and it is a steel crimp fitting in the Aeroquip TTC style.

fitting says it works with -04 hose, is that the only size it'll take, or can you run a -06 through it if you're in a pinch?

Only -04 hose works with this one. The crimp geometry and bore are sized specifically for that dash size, so running a -06 through it isn't something it's built to handle. For -06 hose you'd need to look at a different fitting in the 1A Series lineup.
