fitting says no sealant needed on the 3/4-16 thread -- is that right or should I still tape it?

JIC 37-degree flare connections seal on the flare seat itself, not the threads, so tape or thread sealant would actually be wrong to use here. The metal-to-metal contact at the flare does the sealing work. Just make sure the mating surface is clean and in good shape before you torque it down.
