fitting says it's for low and medium pressure hydraulics, does that mean it won't hold up if there's any pressure spikes at all, or is there some wiggle room there?

For systems where pressure spikes or shock loads are a regular occurrence, this fitting isn't the right call on its own. The product data specifically calls out H277 or H435 hose as the appropriate choice when shock hazards are present. In a stable low to medium pressure setup without those conditions, it performs as intended. If your system runs clean without surges, you're in good shape with this one.
