fitting says it works with H277 or H435 hose, does that mean it won't work on anything else, or is that just for shock hazard situations?

The H277 and H435 recommendation is specifically for environments where shock hazards are a concern. For general low and medium pressure hydraulic applications, the fitting is rated for broader use with 1 and 2 wire braid hose in a -06 hose size.
