got some stainless fittings that like to bind up, is this tape meant to help with that or is it just for sealing

Beyond sealing the threads, the tape also lubricates and helps prevent galling and seizure. It is specifically called out as providing anti-seize protection and guarding against issues like corrosion, carbon fusion, and galvanic pitting on metal fasteners.

Can I use this Teflon tape on some stainless steel fittings without causing any issues?

For anti-seize applications on stainless steel and aluminum, nickel filled Teflon tape is recommended, as it protects against corrosion, seizure, galling & carbon fusion, rust, and galvanic pitting. The temperature range is -450°F to 2400°F.
