Got a cylinder with a 3 inch bore that needs a new piston seal, this one gonna fit right?

For a 3.00 inch bore, this is the correct size. The piston diameter comes in at 2.996 inches with a tolerance of plus or minus 0.001 inches, and the groove diameter is 2.608 inches. Bore tolerance is plus or minus 0.002 inches, so as long as your cylinder is within that range, you should have a proper fit without any modification.

It matches a 3.00 inch bore and a 2.608 inch groove diameter, with a 2.996 inch piston diameter. The tolerances called out are ±0.002 inch on bore and ±0.001 inch on piston diameter, so it is meant for fairly tight hardware.

Will this seal hold up in a hydraulic system running around 3000 PSI, give or take?

This Style 1400 seal is rated to handle pressures from 0 to 5,000 PSI, so 3000 PSI should be well within its operating range.
