does this fitting need any kind of sealant on the threads before you put it together, or is it good to go as-is?

No sealant needed on the threads. The 1-5/8-12 JIC 37 degree flare connection seals on the flare itself, so adding thread sealant would actually be working against you. Just make sure the mating surfaces are clean and in good shape before assembly.
