does this coil spring need to be stretched out to fit over the hose, or does it slide on pretty easy as-is?

For most installations, you'll need to unwind the coil slightly to open up the inner diameter enough to work it onto the hose. The spring is meant to fit snug against the hose outer diameter, so a little expansion during installation is normal and expected. Once it's seated, that snug fit is what keeps it doing its job.

What size hose does this coil fit? I'm looking to protect the outside of a hose with a 0.6 inch diameter.

This protective coil spring is designed for hoses with an outer diameter that's very close to its 0.61 inch inner diameter. You might need to unwind it a bit to get it started.

does this coil just slip over the hose or do you have to unwind it some to get it on there?

For most hoses, you'll need to unwind the coil a bit to open up the inner diameter before sliding it over the outer surface. The 0.61 inch ID is meant to sit snug once it's in place, so expanding it slightly during installation is normal and expected. Once you release it, it closes back down around the hose and stays put.
