Got a -05 hose assembly I'm building out and need a female JIC swivel on the straight end. This the right fitting for that?

For a -05 hose with a straight female JIC 37 degree flare swivel connection, yeah, this is exactly what you'd reach for. It's part of Eaton Aeroquip's FC5810 Series, and the swivel end lets you rotate it into position during assembly so you're not putting a twist load on the hose. Just make sure you've got the FT1243-100-5 crimp die on hand, because that's the specific die required to properly crimp this fitting.
