what all can this adapter be used for, like is it just hydraulics or does it work for other stuff too

Grease systems, instrumentation lines, and most hydraulic setups all fall within the rated application range for this fitting. The 1/8-27 NPT thread on both ends keeps it compatible across a pretty wide range of common industrial uses, so it's not limited to just one type of system.

got a little hydraulic gauge setup. is this the straight piece that goes 1/8 male npt into 1/8 female npt?

Straight adapter for exactly that thread change: 1/8-27 male NPT on one end to 1/8-27 female NPT on the other. It is meant for grease, instrumentation, and most hydraulic systems.

This Eaton Aeroquip adapter is suitable for instrumentation applications as well as grease and most hydraulic systems.
