got a hose end that’s 1-5/16-12 JIC, will this adapter land me on a 1-5/8-12 SAE o-ring boss port?

Match the two thread callouts and end types and you are in the right ballpark. One side is 1-5/16-12 male JIC 37 degree flare (SAE 37), and the other side is 1-5/8-12 male SAE O-Ring Boss (straight thread O-ring). It is a straight steel adapter, male to male.

what industries is this adapter actually built for? seen a lot of adapters that say they work everywhere but end up being junk in harsh conditions

Marine, military, chemical processing, pulp and paper, food and beverage, and offshore drilling are all listed applications for this fitting. That covers a pretty wide range of demanding environments, so it's not just a general-purpose shop adapter. The Eaton Aeroquip 202702 series has a reputation for holding up where conditions get rough.

got a hose end that’s -16 JIC, and the port I’m going into is -20 ORB. is this the right straight adapter to marry those up

For that hookup, yes. This adapter is a straight steel fitting with a 1-5/8-12 male SAE O-ring boss (straight thread O-ring) on one end and a 1-5/16-12 male JIC 37 degree flare on the other, which matches -20 ORB to -16 JIC.
