Will this here adapter fit right onto a standard 1/8 NPT male fitting? Just wanna make sure before I order a bunch.

It will, yes. This adapter's got that 1/8-27 Male NPT threading to fit right up. Then you get your 7/16-20 Female JIC 37 degree flare swivel on the other end.

what industries is this adapter actually used in, or is it more of a general-purpose fitting?

Marine, military, chemical processing, pulp and paper, food and beverage, and offshore drilling are all listed applications for this adapter. That covers a pretty wide range of demanding environments, so it gets used in a lot of places where connections need to hold up under real conditions rather than just shop-floor stuff.
