Got a fitting that's 1-5/16-12 JIC on one end and need to step it down to 1-1/16-12 JIC on the other end. This the right part for that?

That's what this adapter does. One end is 1-5/16-12 male JIC 37 degree flare, the other is 1-1/16-12 male JIC 37 degree flare, both in a straight configuration. Both ends use the same SAE 37 degree flare seating, so as long as your mating fittings are female JIC on both sides, you're good to go.

got a hose end with a 1-5/16-12 JIC flare and need to tie into a 1-1/16-12 JIC flare. is 2027-16-12S the straight union for that?

For tying two SAE 37 degree JIC flare connections together in a straight line, this adapter matches a 1-5/16-12 male JIC on one end and a 1-1/16-12 male JIC on the other. It is a 2027 Series union style adapter with SAE 37 degree flare to SAE 37 degree flare.
