what all is this plug rated for use in, hydraulic lines only or can it handle chemical and instrumentation lines too?

Hydraulic is the primary use, but the listed applications cover instrumentation and chemical processing systems as well. The 37 degree JIC flare design is common across all three of those service types, so it fits right into mixed-service setups without needing a different fitting series.
