got a hose end that’s 1/2-20 female JIC, will this mate up and give me a 9/16-18 male JIC on the other side?

For a straight JIC 37 degree flare connection, it converts from 1/2-20 female JIC on one end to 9/16-18 male JIC on the other. It’s a female to male JIC flare adapter, so it’s meant for exactly that kind of size step.

fitting's got a 9/16-18 male end on it, will that thread straight into a standard #6 JIC port without any sealant or tape?

JIC 37 degree flare connections seal on the flare itself, so no thread sealant or tape is needed on either end. The 9/16-18 male threads on this adapter are standard #6 JIC, and the 1/2-20 female end is standard #5 JIC. As long as the mating fittings are also JIC 37 degree flare, you'll get a metal-to-metal seal that holds without any added compounds.
