i got a 1/4-18 female npt on one side already. will this adapter let me swivel that connection and still stay 1/4-18 female npt on both ends?

Function-wise, it is a straight pipe-to-pipe steel adapter that goes from 1/4-18 female NPT swivel (NPSM) on one end to 1/4-18 female NPTF on the other end.

What kind of applications is this adapter good for? I work in a food processing plant, and we use a lot of hydraulic stuff.

Function-wise, it’s a straight steel adapter in Eaton Aeroquip’s 2046 series with a 1/4-18 female NPT swivel connection to a 1/4-18 female NPT connection. It’s meant for straight-through hookups where you want a female NPT swivel on one side.
