fitting says reduced bore, does that mean it won't flow as good as a full bore 1 inch JIC setup, or is the difference pretty minor in most hydraulic lines?

Reduced bore does mean the internal flow path is slightly smaller than a full-bore equivalent at the same hose size. On a -16 hose with this fitting, you'll see a modest restriction compared to a full-bore 1-inch JIC connection. For most standard hydraulic circuits running moderate flow rates, the practical difference is minimal and the tradeoff is usually worth it for packaging reasons. High-flow applications where every bit of pressure drop matters are the main cases where a full-bore fitting would be the stronger choice.
