What's the max pressure this little guy can handle?

It's rated to handle up to 10,000 PSI, but the minimum burst pressure is 20,000 PSI.

The valve comes with a 1/4 NPT thread.

The port on this one is 1/4 NPT and the valve size is 1/4, so it matches a 1/4 NPT connection.

handle on this thing -- is it metal or some kind of plastic? want something that'll hold up getting grabbed with greasy hands regular

The handle material depends on the valve size you're working with. For the 1/4 through 1/2 inch sizes, it's a yellow cast aluminum handle. Step up to the 3/4 or 1 inch sizes and it switches to yellow malleable iron. Either way you're getting metal, not plastic, so it'll hold up fine to regular shop use and rough handling.
