ive got a hose that measures right around 1-7/8 on the outside, is this clamp gonna snug down on that?

What kinda torque can this handle before I strip it?

The T-bolt is engineered to handle a maximum recommended torque of 70 inch pounds, so you'll want to stay at or below that.

clamp says 1.66 to 1.97 inch diameter range -- does that mean it'll fit a hose that measures right at 1.75 inches outside?

Anything falling between 1.66 and 1.97 inches sits within the adjustment range on this clamp, so 1.75 inches puts you squarely in the middle with room to tighten down properly. The 0.75 inch band width gives you good surface contact across that range, which helps keep pressure even around the hose.
