got a hose that's right around 1.6 inch OD, will this clamp actually cover that without being maxed out?

The adjustment range on this clamp runs from 1.5313 inches up to 1.8438 inches in diameter, so a 1.6 inch outside diameter sits comfortably inside that window.

band's only 0.75 wide, that gonna be enough to hold a hose solid on a 1.75 inch ID connection, or should I be looking at something wider?

For a 1.75 inch ID hose end, that 0.75 inch band width is well suited to the job. The clamp is rated for diameters between 1.53 and 1.84 inches, so a 1.75 inch connection lands right in its working range. The 301 stainless band at 0.025 inch thick gives you a firm, even seat across the full width without needing to go wider. Torque it to 70 in. lbs. and you'll have a secure, stable connection.
