i’ve got a hose end that’s 9/16-18 JIC, will this adapter screw right into it and still give me 1/4 NPT on the other side?

For connecting a 9/16-18 male JIC 37 degree flare to a 1/4-18 male NPT port, that’s exactly what this fitting is set up to do. One end is 9/16-18 male JIC flare and the other end is 1/4-18 male NPT, in a straight body.

Got a hydraulic line running 1/4 NPT male on one end and need to tie into a JIC fitting on the other, this straight adapter do that job?

Yeah, that's exactly what it's built for. One end is 1/4-18 Male NPT and the other is 9/16-18 Male JIC with a 37-degree flare seat. Both threads are male, so you'd need female counterparts on each side of your line. The straight configuration keeps everything in-line, which helps a lot when you're working in a tight spot and can't afford any offset. At 1.9 inches long, it's a pretty compact piece, so it tucks in well without adding much length to the assembly.
