fitting's got a 3/4-16 thread on the JIC end, but what size hose does it actually crimp onto?

The crimp end is sized for -08 hose. That's a half-inch nominal hydraulic hose, which is one of the more common sizes you'll run across in medium-duty hydraulic lines. The JIC swivel end threads at 3/4-16 and uses a 37-degree flare seat, so it mates up with standard JIC 37 female connections on that thread size.

You're reading it correctly. The FC8779-0808-333 goes together without a mandrel and doesn't call for any thread sealant during assembly. That's just how Aeroquip built this particular crimp fitting, which keeps the installation process a good bit cleaner and faster than some other styles you might've worked with.
