Will this elbow fitting hold up if I'm running hydraulic fluid through it? Just want to make sure it's compatible.

This fitting is generally rated for pressures equal to the maximum allowable working pressures of stainless steel tubing, which is what's recommended for use with it. Just be aware that elevated temperatures can reduce the maximum working pressure, so if you're running hot fluid, it's best to call for application assistance to be sure.

these fit with Swagelok fittings or are they a whole separate system?
