Got a cylinder rod that measures out to 7/8 inch, this wiper ring gonna seat up right on that?

0.875 inches is exactly what this one's built for. The outer diameter runs 1.25 inches with a 3/16-inch base thickness, so as long as your gland is cut to standard ST style dimensions, it should drop right in without any fussing around.

i got a cylinder rod that measures 7/8. is the ST-87 the right wiper size for that?

For a 0.875 inch rod, the ST-87 matches the rod diameter. It is sized with a 1.25 inch wiper OD and a 3/16 inch base thickness, so it is meant to seat in a standard ST style gland that takes those dimensions.

Will this wiper ring hold up in cold weather? Say, down around zero degrees F?

The urethane material is rated down to -65°F, so it should be good to go even in those temps.
