stainless body on this one, is that mostly for corrosion stuff or does it help with toughness too?

Stainless steel is mainly a corrosion resistance pick, especially in harsher fluids or environments where carbon steel would rust or pit. You also get a durable valve body, which is helpful in industrial service where the valve sees regular handling and exposure.

body on this thing is stainless steel, right? trying to avoid anything that'll rust out on me in a wet environment

Stainless steel all the way through on the body, so corrosion resistance is built into the core of it. That makes it a solid pick when moisture or aggressive media are part of the picture and carbon steel just isn't going to hold up long term.
