Will this here fitting work to join up stainless lines with different thread types?

This straight adapter is indeed made for connecting stainless lines that use a male BSPP thread on one side and a female NPT thread on the other.

got a G 3/8-19 bspP male on one hose and need to hook into a 3/8-18 NPTF female port. is this the right adapter?

For that thread changeover, it matches what you described. One end is a G 3/8-19 BSPP male and the other end is a 3/8-18 NPTF female, both in 3/8 inch size, so it’s made to bridge those two standards in a straight adapter.

Got a piece of equipment running BSPP fittings and need to tie it into some NPT hydraulic connections on our end. This the right adapter for that kind of crossover?

For a 3/8" BSPP male to 3/8" NPT female connection, yeah, that's exactly what this one does. The male side is a G 3/8-19 BSPP thread and the female end accepts a 3/8-18 NPTF connection. Straight body, no bends or offsets, so it keeps the transition clean and the flow path consistent between the two thread standards.
