Got a compression fitting assembly running hydraulic line through a pretty wet, chemical-heavy area. Will a stainless tube nut hold up better than carbon steel in that kind of setup?

316 stainless is genuinely one of the better choices for that kind of exposure. It holds up well against moisture, mild acids, and a lot of the chemical media you'd run into in industrial hydraulic environments. Carbon steel nuts will pit and corrode over time in those conditions, which can compromise your seal. Swapping in a stainless nut like this one keeps the fitting assembly consistent and cuts down on corrosion-related leaks down the line.
