both ends are M14 x 1.5 male DIN, so this'll work to join two female DIN tube fittings back to back in a straight run?

Correct on the thread spec. Both sides are M14 x 1.5 male DIN tube, so you can use it to bridge two female DIN connections in a straight line. It's a same-size union all the way through, no reducing, no offset. The 25mm overall length is worth accounting for when you're measuring out your circuit, especially in tight hydraulic connections runs.
