what kind of seals does this cartridge valve use, and will they hold up in a greasy shop environment?

Buna-N seals are used throughout, which are a solid general-purpose choice for hydraulic systems running standard mineral-based fluids. They hold up well in industrial environments and are known for decent resistance to oils and moderate heat. The valve itself is built from alloy steel, so the body is not going to give you trouble in a tough shop setting. Just keep your fluid cleanliness at or better than 18/16/13 micron and you should get good long-term service out of it.
