hose says it goes up to 212 degrees -- we run water-based fluid in a system that can spike up near that temp pretty regular. this gonna hold up or is that pushing it too close to the limit?

At 212 degrees you're sitting right at the top of the rated temperature range for this hose. For systems that spike near that ceiling on a regular basis, you'd want to factor in that sustained operation at the maximum rated temp puts more cumulative wear on the tube and cover than occasional brief peaks do. The synthetic rubber tube and cover are rated for that range, and the hose is built for petroleum and water-based fluid service specifically, so the material compatibility is there. Just know you're not running with much headroom when those spikes hit the upper limit.

trying to swap out a -10 hose on a piece of equipment, is this one actually 5/8 id and what’s the outside size?

For the -10 size on this hose, the inside diameter is 0.62 inch and the outside diameter is 0.88 inch.
