got a spot that needs a 1/4-20 screw but it has to reach through about 5 inches. is this the right thread and length?

You are looking at a 1/4 inch diameter screw with 20 threads per inch, and it is 5 inches long. If your application calls for 1/4-20 and you need a 5 inch SHCS, the sizing matches.

These going in a stainless steel assembly, will the 18-8 material hold up without causing any galvanic issues between parts?

18-8 stainless steel is generally compatible with other stainless components, so corrosion from galvanic reaction is much less of a concern than it would be mixing stainless with carbon steel or aluminum. That said, the real strength here is the corrosion resistance the 18-8 grade brings on its own, which makes it a solid choice for assemblies exposed to moisture, chemicals, or outdoor conditions. For an all-stainless build, you are in good shape.
