got a job that calls for 1 inch tubing, is this one actually 1.00 OD and what’s the inside size on it

tubing says it's annealed for bending and flaring, does that mean it'll hold up okay if I need to run a tight bend without cracking or kinking on me?

Annealing softens the steel enough to allow bending and flaring without the material fracturing or collapsing at the bend point. That's actually the whole point of the SAE J524 spec this tubing is built to. The low carbon content keeps it workable, so you've got some flexibility in routing without fighting the material the whole way through the job.
