got a 1-1/4 inch line that needs a short extension before it hits the fitting, will a 3-inch nipple give me enough room to work with or should I be looking at something longer?

Three inches of usable length between fittings is pretty common for tight runs where you just need a stub connection or a short bridge between components. With 1-1/4-11-1/2 NPT threads on both ends, it'll thread straight into any standard NPT female fitting of the same size. Whether three inches is enough really comes down to your spacing, but for close-quarter connections this length gets used a lot in exactly that kind of situation.

Check the thread callout on your existing part. This nipple is male NPT with a 1-1/4-11-1/2 thread, so it is meant to screw into a matching 1-1/4 NPT female port or fitting.

Will this Schedule 80 nipple work alright for running some compressed air lines in my shop?

Schedule 80 steel is certainly robust enough for compressed air. Just ensure your fittings and connections are also rated for the pressure you'll be running to avoid any leaks or failures.
